Vinification
● Alcoholic fermentation in stainless steel temperature regulated tanks ; malolactic fermentation completed cold stablization.
● Minimum ageing of 2 years on the lees
● Alcohol content: 12,10% by vol.
● Dosage : 2 gr/l
Tasting Notes
● Apearance : The wine presents a lovely golden color with slight amber highlights.
● Nose : Very aromatic, characteristic of the Côte des Bar. Opens with floral notes. Upon aerating, red fruit aromas dominate.
● Palate : On the palate, the wine is ample and generous. Pinot noir is revealed through red berry flavors and a nice complexity. The lively attack gives way to a nice acidity on the finish. The age of the vines allows the appearance of light citrus notes on the finish.
Accord met/vin
This champagne is very thirst-quenching and is perfectly suited for an aperitif dinner. It goes very well with Mediterranean dishes and French cheeses such as chaource or soumaintrain.
