Vinification
● Alcoholic fermentation 228 l oak barrles ; malolactic fermentation completed, natural cold stablising filtered
● Minimum ageing of 20 months on the lees
● Alcohol content: 12,60% by vol.
● Dosage : 4 gr/l
Tasting Notes
● Appearance : The wine has a pretty pale yellow color with gold reflection
● Nose : The first nose is generous and complex, with floral (hawthorn, cherry blossom) and fruity (white currant, cherry and raspberry) aromas. After aeration, notes of mint and sweet spices are revealed.
● Palate : the attack is delicious and fruity. The very delicate bubbles melt in your mouth. The wood gives a beautiful structure to the wine, “toasting” it, summoning sweet vanilla and caramelized notes. The finish is fresh, slightly peppery.
Food pairings
This is a gourmet champagne. It is perfect for an aperitif, but you can indulge yourself in some pretty pairings. It will highlight qualitative dishes such as flambéed crayfish, a baked turbot, a 5A andouillette sausage or even a Salers cheese from the Auvergne region of France
